This Cheese Cake has long been a family favourite of ours, and has featured at many of our celebrations over the years. It doesn't require cooking, can be made a day ahead, looks great, and any leftovers (if you are lucky enough for there to be any) are absolutely delicious.
It's not as sweet as you would expect, as the lemon juice cuts through the sugar.
It can easily be made gluten free by switching the biscuits for a gluten free version.
