Cooking the rice for making your own Sushi Rolls is easy...
Ingredients
For the rice
1 ½ cups Sushi Rice
2 cups cold water
For the seasoning
1 tsp salt
1 tsp sugar
1 ½ tbsp rice wine vinegar
Method
Cook the Rice
Combine rice and water in a pot with lid.
Bring to the boil, stir, reduce heat to a low setting (only just simmering), cover with lid and cook for 18 - 20 minutes.
Check and stir the rice periodically – if all the water is absorbed and the rice is sticking to the pot bottom, add a little extra water (so that there is 1-2 mm in the bottom of the pot) to ensure the rice doesn’t burn.
You need all the water to be absorbed, so don't add too much extra, and don't add any water just before the cooking time is up - at this stage it is better to turn off the heat and leave the rice covered in the pot to continue cooking for a few more minutes.
Season the Rice
Combine the salt, sugar and rice wine vinegar while the rice cooks.
Place the cooked rice into a bowl, stir the seasoning through the rice.
Cover and cool, then refrigerate.
If you don't cover the rice, it will dry out.
