Cheddar Crackers

I looked everywhere for a recipe for low carb, nut free crackers for my son's lunch box at school...finding a nut-free recipe that he liked proved difficult, so I came with this one...
Ingredients
55g coconut flour
175g cheddar cheese, grated
1 tbsp grated Parmesan cheese
30g salted butter, melted
1 egg
½ tsp salt
1 tsp mixed herbs
½ tsp sweet paprika
Method
Preheat the oven to 180°C.
In a large bowl, blend together the coconut flour, cheeses, salt, herbs and paprika.
Add in the melted butter and egg. Mix well.
Form into a dough, and kneed for a couple of minutes to bring the dough together.
Roll out the dough between two pieces of grease-proof paper until about 3-5 mm thick.
Cut out small circles with a cookie cutter.
Transfer to a cookie tray lined with baking paper or a baking sheet.
The dough looks a bit dry and crumbly, but don't worry - as the cheese melts when you cook them, the biscuits form together nicely.
The cut out duogh may crack - just push the bits back together on the tray.
Bake for 7-10 minutes until golden.
Leave to cool on the tray.
