These are yummy hot or cold, and can be frozen and re-heated at a later date. Great to have on hand when you need a snack and nice with a dab of butter if you can tolerate it.
Stevia comes in many brands and formulations. I like the NuNaturals pure extract, which can be purchased here, but make sure that you get the "pure extract" as they have other formulations which have different ingredients.

Ingredients
- 4 Large Eggs
- Stevia powder (to equivalent of 2/3 cup of sugar sweetness. eg ½ tsp Nu-naturals Nustevia pure stevia extract)
- 3 tbsp coconut oil, melted
- ½ cup coconut flour
- ¾ cup almond milk
- 1 tsp vanilla powder
- ½ tsp Bicarbonate of Soda
- ¼ tsp Cream of Tartar
- ¼ tsp salt
- 1 cup of fresh or frozen Raspberries
2. Process the Stevia powder, eggs and melted coconut oil in a food processor until combined.
For a Thermomix process on speed 5 for 5 seconds, then scrape down the sides.

3. Add the coconut flour, almond milk, vanilla powder, Bicarbonate of Soda, Cream of Tartar, and salt. And process until combined.

4. Transfer the mixture to a bowl and stir through the fresh/frozen raspberries.
5. Spoon the mixture evenly between the 12 muffins.
6. Bake for 20- 25 minutes, or until cooked through.
