Cauliflower Bites

These yummy bite-size pieces of cauliflower make a great snack or a side to a main meal. You can also add them to a salad for some variety.
Ingredients
½ - 1 cauliflower, cut into small bite-size pieces
1-2 tbsp coconut flour
Salt, to taste
½ cup almond flour
1-2 eggs, beaten
¼ cup grated parmesan cheese
a pinch of sweet paprika
a pinch of black pepper
Coconut oil (about ½ cup), for frying

Coconut oil (about ½ cup), for frying
Method
- Blanch the cauliflower pieces in a pot of salted water for 30-45 seconds. Drain, then cool them in ice-water. Drain again and pat dry with some paper towel or a clean tea towel.
2. Take 3 bowls. In the first place the coconut flour. In the second place the beaten egg. In the third bowl mix together the almond flour, parmesan cheese, sweet paprika, pepper and salt.
3. Coat the cauliflower pieces first in the coconut flour, then in the egg and finally in the flour mix. Set aside.
4. Heat coconut oil in a fry pan and shallow fry the coconut pieces until golden-browned all over. Once cooked, remove from the pan and drain them on paper towel.
